Irish Lamb Stew

Ingredients

1 kg hogget shoulder chops, fat removed

2 cups liquid beef stock

6 potatoes, sliced

3 onions, sliced

3 carrots sliced

salt & black pepper

1 Tbsp chopped parsley

Directions

Put chops, potatoes, onions, carrots and beef stock into a large saucepan.
Cover and bring to the boil.

Reduce heat and simmer for 12 hours or until meat is tender.

Season with salt and pepper to taste.

Garnish with parsley.
